Vegetable Samosa

An irresistible snack that’s perfect for any occasion.

Ingredients

For the filling:
3 cups of chopped and diced vegetables like potatoes, carrots and peas
1 cup of Anantya Organic Cold Pressed Groundnut Oil
½ cup of roasted peanuts
1 thinly sliced large onion
Finely diced 1-inch ginger

For the outer covering:
2 cups of maida (flour)
Water, as required
Salt, as per your taste

Steps

For the filling:
Boil the potatoes, carrots and peas and keep aside for some time.
Take a pan, add Anantya Organic Cold Pressed Groundnut Oil and heat it well. Stir fry the onion and
ginger until it’s soft. Add the boiled vegetables and stir fry on low heat. Add the peanuts and continue to
stir fry for a minute. Sprinkle salt as per your taste.
For the outer covering:
Knead the maida till it turns into a soft dough. Cover and let it rest for some time. Divide the dough into
small portions and roll each into thin circles about the size of a puri. Cut each circle in half into a
semi-circle. Roll each semi-circle till it forms a cone.
For the Samosa:
Fill each cone with a spoonful of the filling and seal the opening by brushing water on the edges. Ensure
you have sealed it well. Pour Anantya Organic Cold Pressed Groundnut Oil into a deep-bottomed kadai
and heat it well. Deep fry the samosas until golden in colour.

Serving Tips

Serve hot with ketchup or imli chutney.
